- 2 lbs pork spare ribs, cut into chunks
- 3 large carrots, sliced
- 2 stalks celery, sliced
- 1 tbsp minced ginger
- 4 cloves garlic, minced
- 8 cups water or low-sodium beef broth
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a large pot and sear pork ribs until browned on all sides.
- Add garlic and ginger, sautéing for 2 minutes until fragrant.
- Pour in water or broth and bring to a boil, then immediately reduce to a simmer.
- Simmer the ribs for 90 minutes, skimming foam from the surface.
- Add carrots and celery; cook for another 20-30 minutes until tender.
- Stir in soy sauce and season with salt and pepper before serving.
