- 2 cans (15oz) chickpeas, drained and rinsed
- 1 English cucumber, diced
- 1/2 red onion, finely diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/3 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Rinse chickpeas and pat dry.
- Dice cucumber and red onion into small pieces.
- Chop parsley and mint finely.
- Whisk olive oil, lemon juice, salt, and pepper together.
- Combine chickpeas, vegetables, and herbs in a large bowl.
- Toss with dressing and let sit for 10 minutes before serving.
