Ingredients

  • 1 cup brown lentils, rinsed
  • 1 large yellow onion, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Sauté onion, carrots, and celery in olive oil over medium heat until softened.
  2. Stir in minced garlic and dried thyme for 60 seconds.
  3. Mix in crushed tomatoes and simmer for 5 minutes.
  4. Add rinsed lentils and vegetable broth; stir well.
  5. Cover and simmer on low heat for 40 minutes until lentils are tender.
  6. Stir in lemon juice and adjust seasoning with salt and pepper before serving.
