- 1 cup brown lentils, rinsed
- 1 large yellow onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 6 cups vegetable broth
- 1 tsp dried thyme
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Sauté onion, carrots, and celery in olive oil over medium heat until softened.
- Stir in minced garlic and dried thyme for 60 seconds.
- Mix in crushed tomatoes and simmer for 5 minutes.
- Add rinsed lentils and vegetable broth; stir well.
- Cover and simmer on low heat for 40 minutes until lentils are tender.
- Stir in lemon juice and adjust seasoning with salt and pepper before serving.
