A refreshing coastal-inspired pasta salad featuring seared shrimp and scallops tossed in a zesty lemon-garlic vinaigrette.


Ingredients

  • 1 lb Rotini pasta
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb sea scallops
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 cup cherry tomatoes, halved
  • Salt and black pepper to taste

Instructions

  1. Boil salted water and cook rotini until al dente.
  2. Drain pasta and rinse with cold water to stop cooking.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sear shrimp and scallops until opaque; remove from heat.
  5. Whisk lemon juice, minced garlic, and olive oil in a bowl.
  6. Combine cooled pasta and seared seafood in a large bowl.
  7. Pour dressing over the mixture and toss gently.
  8. Fold in chopped parsley and cherry tomatoes.
