A refreshing coastal-inspired pasta salad featuring seared shrimp and scallops tossed in a zesty lemon-garlic vinaigrette.
Ingredients

- 1 lb Rotini pasta
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb sea scallops
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 cup cherry tomatoes, halved
- Salt and black pepper to taste
Instructions
- Boil salted water and cook rotini until al dente.
- Drain pasta and rinse with cold water to stop cooking.
- Heat olive oil in a skillet over medium-high heat.
- Sear shrimp and scallops until opaque; remove from heat.
- Whisk lemon juice, minced garlic, and olive oil in a bowl.
- Combine cooled pasta and seared seafood in a large bowl.
- Pour dressing over the mixture and toss gently.
- Fold in chopped parsley and cherry tomatoes.
