Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1/2 cup creamy peanut butter
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp Sriracha
  • 1 tbsp fresh lime juice
  • 1 tbsp grated fresh ginger
  • Fresh cilantro, chopped peanuts, and green onions for garnish

Instructions

  1. Sear chicken thighs in a skillet for 3 minutes per side.
  2. Whisk peanut butter, coconut milk, soy sauce, honey, sriracha, and ginger until smooth.
  3. Place seared chicken in the crockpot.
  4. Pour the peanut mixture over the chicken.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Stir in lime juice during the final 10 minutes of cooking.
  7. Garnish with peanuts, cilantro, and green onions before serving.
