Ingredients

  • 1 lb Ground Italian Sausage
  • 1 can (28 oz) Crushed Tomatoes
  • 4 cups Beef Broth
  • 3 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • Salt and Pepper to taste
  • 8 oz Lasagna Noodles, broken into pieces
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella
  • Fresh Basil for garnish

Instructions

  1. Brown the Italian sausage in a skillet until cooked through, then drain the fat.
  2. Add the cooked sausage to the slow cooker along with crushed tomatoes, beef broth, garlic, and oregano.
  3. Cover and cook on Low for 6 hours.
  4. Stir in the broken lasagna noodles and cook for another 30-45 minutes until tender.
  5. Ladle soup into bowls and top with a scoop of ricotta and shredded mozzarella.
  6. Garnish with fresh basil and serve immediately.
