- 4–6 bone-in, skin-on chicken thighs
- 2 cups unsweetened apple cider
- 4 cloves garlic, minced
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 4 cups shredded mixed cabbage
- 3 tbsp apple cider vinegar
- Salt and pepper to taste
- 2 tbsp cooking oil
Instructions
- Sear chicken thighs skin-side down in oil over medium-high heat until golden.
- Remove chicken and set aside.
- Sauté minced garlic in the pan for 60 seconds.
- Deglaze the pan with apple cider, scraping up brown bits.
- Whisk in honey and Dijon mustard; simmer until thickened.
- Return chicken to pan and simmer for 15-20 minutes until cooked through.
- Toss shredded cabbage with cider vinegar, salt, and pepper.
- Serve chicken with a side of the crunchy slaw.
