- 3 medium zucchinis, sliced
- 4 cloves garlic, peeled
- 3 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp fresh thyme
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Toss zucchini and garlic with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes until golden brown.
- Transfer roasted vegetables to a pot and add vegetable broth.
- Simmer for 5-10 minutes.
- Blend until smooth using an immersion blender.
- Stir in fresh thyme and lemon juice before serving.
