- 1.5 cups graham cracker crumbs
- 4 tbsp browned butter
- 15 oz pumpkin puree
- 8 oz softened cream cheese
- 1 cup heavy cream
- 1 cup butterscotch chips
- 2 tbsp heavy cream (for glaze)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Combine graham cracker crumbs and browned butter; press into a 9×9 inch pan.
- Beat cream cheese and pumpkin puree together until smooth.
- Whip heavy cream to soft peaks and gently fold into the pumpkin mixture.
- Spread the pumpkin mousse evenly over the crust and refrigerate for 2 hours.
- Melt butterscotch chips with 2 tbsp of cream over low heat until smooth.
- Pour butterscotch glaze over the chilled pumpkin layer.
- Refrigerate for at least 6 hours before slicing.
