- 1 lb Rotini pasta
- 2 cups sunrise cherry tomatoes, finely diced
- 1/2 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp balsamic vinegar
- 1/2 cup fresh basil leaves, torn
- 1/2 cup shaved Parmesan cheese
- Salt and black pepper to taste
Instructions
- Boil pasta in salted water until al dente.
- Finely dice cherry tomatoes into small 'confetti' pieces.
- Whisk olive oil, lemon juice, and balsamic vinegar in a bowl.
- Drain pasta and rinse under cold water until cooled.
- Toss pasta with the dressing in a large bowl.
- Fold in tomato confetti, torn basil, and Parmesan cheese.
- Season with salt and pepper, then chill before serving.
