Description

Chewy, cinnamon-spiced oatmeal cookies sandwiched together with a cloud of sweet marshmallow cream filling.


Ingredients

Scale
  • 1.5 cups rolled oats
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 7oz jar marshmallow fluff
  • 2 tbsp softened butter (for filling)

Instructions

  1. Preheat oven to 350°F and line baking sheets.
  2. Cream butter and brown sugar until fluffy.
  3. Mix in egg and vanilla extract.
  4. Stir in flour, cinnamon, baking soda, and salt.
  5. Fold in the rolled oats.
  6. Scoop tablespoons of dough onto sheets.
  7. Bake for 10-12 minutes until edges are golden.
  8. Cool completely on wire racks.
  9. Whisk marshmallow fluff with 2 tbsp butter.
  10. Pipe filling onto cookies and sandwich together.
