Description

Soft, fluffy peanut butter cupcakes featuring a hidden molten caramel center and topped with creamy frosting.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup homemade or store-bought caramel sauce
  • 1/2 cup peanut butter frosting

Instructions

  1. Preheat oven to 350F (175C) and line a cupcake tin.
  2. Cream butter and brown sugar together until fluffy.
  3. Mix in peanut butter, eggs, and vanilla extract.
  4. Fold in flour, baking powder, and salt until just combined.
  5. Fill cupcake liners halfway with batter.
  6. Add a small dollop of caramel to the center of each.
  7. Top with remaining batter and bake for 18-22 minutes.
  8. Cool completely and frost with peanut butter frosting.
