- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup homemade or store-bought caramel sauce
- 1/2 cup peanut butter frosting
Instructions
- Preheat oven to 350F (175C) and line a cupcake tin.
- Cream butter and brown sugar together until fluffy.
- Mix in peanut butter, eggs, and vanilla extract.
- Fold in flour, baking powder, and salt until just combined.
- Fill cupcake liners halfway with batter.
- Add a small dollop of caramel to the center of each.
- Top with remaining batter and bake for 18-22 minutes.
- Cool completely and frost with peanut butter frosting.
