Ingredients

  • 1 lb ground turkey
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken bone broth
  • 3 medium gold potatoes, cubed
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Brown ground turkey in a large pot over medium-high heat until golden. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until translucent.
  3. Stir in minced garlic and thyme for 1 minute until fragrant.
  4. Return turkey to the pot and pour in chicken bone broth, scraping the bottom for browned bits.
  5. Add cubed potatoes and bring to a boil, then reduce heat to low and simmer for 20 minutes.
  6. Stir in fresh parsley and season with salt and pepper before serving.
