- 2 carrots, diced
- 2 stalks celery, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 6 cups chicken bone broth
- 3 medium gold potatoes, cubed
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Brown ground turkey in a large pot over medium-high heat until golden. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until translucent.
- Stir in minced garlic and thyme for 1 minute until fragrant.
- Return turkey to the pot and pour in chicken bone broth, scraping the bottom for browned bits.
- Add cubed potatoes and bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Stir in fresh parsley and season with salt and pepper before serving.
