Ingredients

  • 4 cups diced Russet potatoes
  • 1 medium onion, diced
  • 4 tablespoons butter
  • 6 cups water or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup milk

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Sauté diced onions until translucent and aromatic.
  3. Add diced potatoes and stir for 3-5 minutes to coat in butter.
  4. Pour in water or broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes until potatoes are tender.
