A thick and creamy potato soup inspired by the Great Depression. This budget-friendly meal uses the potato’s own starch for a rich texture without needing heavy cream.

- 4 cups diced Russet potatoes
- 1 medium onion, diced
- 4 tablespoons butter
- 6 cups water or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup milk
Instructions
- Melt butter in a large pot over medium heat.
- Sauté diced onions until translucent and aromatic.
- Add diced potatoes and stir for 3-5 minutes to coat in butter.
- Pour in water or broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes until potatoes are tender.
- Mash a portion of the potatoes directly in the pot with a masher or fork to thicken.
- Stir in milk, salt, and pepper. Heat through for 5 minutes and serve.
