Ingredients

  • 1 lb ground turkey
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken or turkey broth
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook until browned, breaking it apart with a spoon.
  2. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables begin to soften.
  3. Stir in minced garlic and dried thyme; cook for 1 minute until fragrant.
  4. Pour in the broth and scrape the bottom of the pot to release browned bits.
  5. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
  6. Stir in fresh parsley and lemon juice. Season with salt and pepper before serving.
