- 1 lb ground turkey
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 medium carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 6 cups chicken or turkey broth
- 1 teaspoon dried thyme
- 1/4 cup fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook until browned, breaking it apart with a spoon.
- Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables begin to soften.
- Stir in minced garlic and dried thyme; cook for 1 minute until fragrant.
- Pour in the broth and scrape the bottom of the pot to release browned bits.
- Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
- Stir in fresh parsley and lemon juice. Season with salt and pepper before serving.
