Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 fresh pineapple, sliced into rings
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp vegetable oil
  • 1 lime, cut into wedges for serving

Instructions

  1. Whisk soy sauce, brown sugar, garlic, and ginger until smooth.
  2. Marinate chicken in half the mixture for 30-60 minutes in the fridge.
  3. Preheat grill to medium-high heat and lightly oil the grates.
  4. Grill chicken for 6-7 minutes per side, brushing with remaining glaze at the end.
  5. Grill pineapple slices for 2-3 minutes per side until charred.
  6. Remove all from heat, let chicken rest for 5 minutes, and serve with lime wedges.
