Ingredients

  • 1 lb Rotini pasta
  • 1/2 cup Red wine vinegar
  • 1/2 cup Extra virgin olive oil
  • 1 tbsp Dried oregano
  • 1 tsp Garlic powder
  • Salt and pepper to taste
  • 6 oz Salami, diced
  • 6 oz Pepperoni, diced
  • 8 oz Provolone cheese, cubed
  • 1/2 Red onion, thinly sliced
  • 1 Red bell pepper, diced
  • 1/4 cup Fresh parsley, chopped

Instructions

  1. Cook rotini in salted water until slightly under al dente; drain and rinse with cold water.
  2. Whisk together red wine vinegar, olive oil, oregano, garlic powder, salt, and pepper.
  3. Dice salami, pepperoni, and provolone into uniform pieces.
  4. Combine cooled pasta, diced meats, cheese, red onion, and bell pepper in a large bowl.
  5. Pour the dressing over the mixture and toss gently to coat.
  6. Refrigerate for at least 4 hours before serving.
