Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 2 cups fresh pineapple chunks
  • 1 red onion, cut into wedges
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp grated fresh ginger
  • 2 cloves minced garlic

Instructions

  1. Whisk soy sauce, brown sugar, ginger, garlic, and sesame oil in a bowl.
  2. Marinate chicken in half the sauce for 30 minutes.
  3. Thread chicken, pineapple, and onion onto soaked skewers.
  4. Grill over medium-high heat, turning every 3-4 minutes.
  5. Baste with remaining sauce in the final 2 minutes of cooking.
  6. Remove from heat and rest for 5 minutes before serving.
