Ingredients

  • 1.5 lbs chicken breast, cubed into 1-inch pieces
  • 2 cups fresh pineapple, cubed
  • 1 red bell pepper, cubed
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp vegetable oil
  • Wooden or metal skewers

Instructions

  1. Whisk soy sauce, brown sugar, ginger, and garlic in a bowl.
  2. Marinate chicken cubes in the mixture for at least 2 hours in the fridge.
  3. Thread chicken, pineapple, and bell pepper onto soaked skewers.
  4. Preheat grill to medium-high heat and oil the grates.
  5. Grill skewers for 12-15 minutes, turning occasionally and brushing with leftover marinade.
  6. Remove from heat when chicken reaches 165°F internal temperature.
