- 1.5 lbs boneless skinless chicken breasts
- 1/2 cup sundried tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cups fresh baby spinach
- Salt and pepper to taste
Instructions
- Place chicken breasts in the bottom of the crockpot in a single layer.
- Season the chicken with Italian seasoning, minced garlic, salt, and pepper.
- Pour chicken broth around the sides of the meat.
- Distribute chopped sundried tomatoes evenly over the top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in heavy cream and parmesan cheese during the final 30 minutes of cooking.
- Stir in fresh baby spinach just before serving until wilted.
