Description

Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1/2 cup sundried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of the crockpot in a single layer.
  2. Season the chicken with Italian seasoning, minced garlic, salt, and pepper.
  3. Pour chicken broth around the sides of the meat.
  4. Distribute chopped sundried tomatoes evenly over the top of the chicken.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in heavy cream and parmesan cheese during the final 30 minutes of cooking.
  7. Stir in fresh baby spinach just before serving until wilted.
