- 2 large chicken breasts
- 2 ripe avocados
- 2 tbsp fresh lime juice
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
- 1 tbsp avocado oil
Instructions
- Sear chicken breasts in oil over medium-high heat until cooked through (165°F).
- Let chicken cool completely in the refrigerator.
- Dice cooled chicken into half-inch cubes.
- Mash avocados in a bowl until mostly smooth.
- Stir in lime juice, salt, and pepper.
- Fold in diced chicken, red onion, and cilantro until combined.
