- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 1 quart vanilla bean ice cream
Instructions
- Cream butter and sugars until fluffy.
- Beat in eggs and vanilla extract.
- Stir in flour, baking soda, and salt.
- Fold in chocolate chips.
- Bake scoops of dough at 350F for 10-12 minutes.
- Cool cookies completely on a wire rack.
- Scoop ice cream onto one cookie, top with another.
- Wrap and freeze for 2 hours.
