Ingredients

  • 32 oz frozen tater tots
  • 8 large eggs
  • 2 cups sharp cheddar cheese, grated
  • 1/3 cup smoky red pepper puree
  • 1/2 cup heavy cream
  • 1 tsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Layer frozen tater tots tightly at the bottom of the dish.
  3. Whisk eggs, heavy cream, salt, and pepper until smooth.
  4. Fold in 1 cup of grated cheddar cheese.
  5. Pour egg mixture over the tater tots.
  6. Spoon red pepper puree on top and swirl with a toothpick.
  7. Sprinkle remaining 1 cup of cheese over the top.
  8. Bake for 35-40 minutes until set and golden.
