- 4 (6oz) salmon fillets, skin-on
- 1 lb broccolini, trimmed
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon (juiced and zested)
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk melted butter, minced garlic, lemon juice, salt, and pepper in a small bowl.
- Place broccolini on the pan and toss with a small amount of the butter mixture.
- Place salmon fillets among the broccolini.
- Brush the remaining lemon-garlic butter generously over the salmon fillets.
- Bake for 12-15 minutes until salmon flakes easily with a fork.
- Garnish with fresh parsley and lemon zest before serving.
