Ingredients

  • 4 (6oz) salmon fillets, skin-on
  • 1 lb broccolini, trimmed
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 lemon (juiced and zested)
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk melted butter, minced garlic, lemon juice, salt, and pepper in a small bowl.
  3. Place broccolini on the pan and toss with a small amount of the butter mixture.
  4. Place salmon fillets among the broccolini.
  5. Brush the remaining lemon-garlic butter generously over the salmon fillets.
