- 2 medium sweet potatoes, cubed
- 3 tbsp extra virgin olive oil
- 1 tbsp turmeric powder
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 handfuls baby spinach
- 2 large eggs
Instructions
- Preheat oven to 400F and line a baking sheet.
- Toss sweet potato cubes with oil, turmeric, salt, and pepper.
- Roast for 25-30 minutes, tossing halfway through.
- Sauté spinach in a pan until wilted.
- Poach eggs for 6-7 minutes until yolks are jammy.
- Assemble bowls with spinach, potatoes, and topped with eggs.
