A luxurious roasted salmon dish featuring a sticky, caramelized glaze made from Kentucky bourbon and ripe summer peaches.

- 4 (6-oz) salmon fillets
- 2 medium fresh peaches, diced
- 1/4 cup bourbon
- 3 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tsp fresh thyme leaves
Instructions
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Whisk bourbon, brown sugar, and soy sauce in a saucepan over medium heat.
- Simmer for 5 minutes until the glaze thickens into a syrup.
- Stir in diced peaches and fresh thyme.
- Place salmon on the baking sheet and brush generously with the peach-bourbon glaze.
- Bake for 12-15 minutes until internal temperature reaches 145F.
- Spoon remaining glaze over the fish and let rest for 3 minutes.
