Description

A vibrant and savory one-pan dinner featuring tender chicken glazed in balsamic honey, paired with caramelized Brussels sprouts, tart cranberries, and crunchy pumpkin seeds.


Ingredients

  • 4 chicken breasts
  • 1 lb Brussels sprouts, halved
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds (pepitas)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-7 minutes per side until golden. Remove and set aside.
  3. In the same pan, sauté Brussels sprouts and garlic until browned and tender (about 8 minutes).
  4. Whisk together balsamic vinegar and honey, then pour into the skillet, scraping up the browned bits.
  5. Return chicken to the pan and simmer in the glaze for 3-5 minutes until the sauce thickens.
  6. Stir in dried cranberries and pumpkin seeds just before serving.
