- 4 chicken breasts
- 1 lb Brussels sprouts, halved
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1/4 cup dried cranberries
- 1/4 cup pumpkin seeds (pepitas)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-7 minutes per side until golden. Remove and set aside.
- In the same pan, sauté Brussels sprouts and garlic until browned and tender (about 8 minutes).
- Whisk together balsamic vinegar and honey, then pour into the skillet, scraping up the browned bits.
- Return chicken to the pan and simmer in the glaze for 3-5 minutes until the sauce thickens.
- Stir in dried cranberries and pumpkin seeds just before serving.
