Ingredients

  • 1 lb fresh asparagus, trimmed
  • 1 medium zucchini, sliced into half-moons
  • 1 medium yellow squash, sliced into half-moons
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté minced garlic for 30 seconds until fragrant.
  3. Add asparagus and cook for 3 minutes until bright green.
  4. Stir in zucchini and yellow squash, cooking for 4-5 minutes until caramelized.
  5. Season with salt and pepper, tossing well.
  6. Remove from heat and stir in fresh lemon juice.
  7. Garnish with chopped parsley and serve immediately.
