- 1 lb fresh asparagus, trimmed
- 1 medium zucchini, sliced into half-moons
- 1 medium yellow squash, sliced into half-moons
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Sauté minced garlic for 30 seconds until fragrant.
- Add asparagus and cook for 3 minutes until bright green.
- Stir in zucchini and yellow squash, cooking for 4-5 minutes until caramelized.
- Season with salt and pepper, tossing well.
- Remove from heat and stir in fresh lemon juice.
- Garnish with chopped parsley and serve immediately.
