  • 2 medium sweet yellow onions, thinly sliced
  • 1 cup Guinness beer
  • 4 sturdy brioche or pretzel buns
  • 4 oz aged cheddar or blue cheese (1 oz per burger)
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp butter for caramelizing onions

Instructions

  1. In a skillet over medium heat, melt butter and add sliced onions. Cook slowly until golden brown, about 20-25 minutes.
  2. Add Guinness beer to the skillet and simmer until the liquid thickens slightly. Set aside.
  3. In a bowl, mix ground beef with salt and pepper. Shape into four equal patties, making an indentation in the center.
  4. Preheat grill or stovetop pan over medium-high heat. Cook each patty for 4-5 minutes per side until desired doneness is reached.
  5. A minute before removing from heat, place cheese on each patty to melt.
  6. Assemble burgers on buns, top with Guinness-caramelized onions and any additional toppings.
