- 1/2 cup (112g) unsalted butter, melted
- 1/2 cup (100g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (120g) 2% Greek yogurt (sour cream also works)
- 3/4 cup (140g) mini chocolate chips + a handful more for sprinkling on top
Instructions
- Preheat your oven to 325°F (163°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure the bread doesn’t stick.
- In a bowl, whisk together the flour, baking soda, and salt until evenly combined. Set aside.
- In a separate large bowl, mix the melted butter with the light brown sugar and granulated sugar. Whisk vigorously for 1-2 minutes until the mixture becomes paste-like and well combined. You may use a whisk or an electric mixer with paddle attachment.
- Stir in the mashed bananas, then add the eggs, Greek yogurt, and vanilla extract. Mix until all wet ingredients are fully incorporated.
- Gently fold the dry ingredients into the wet mixture until just combined, taking care not to overmix. Then fold in 3/4 cup of mini chocolate chips evenly into the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle additional mini chocolate chips on top for an attractive finish.
- Bake in the preheated oven for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
