  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup Guinness stout beer
  • 3 medium carrots, chopped
  • 1 large onion, diced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 4 cups beef broth
  • 1 bouquet garni (thyme and bay leaves)
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef chunks with salt and pepper; sear until browned on all sides. Remove from pot.
  2. Add onions, carrots, and celery to the same pot; sauté until softened (5-7 minutes). Stir in minced garlic and cook for another minute.
  3. Sprinkle flour over the vegetables; stir well to coat. Slowly pour in Guinness while scraping the bottom of the pot.
  4. Return the beef to the pot along with broth, potatoes, bouquet garni, salt, and pepper; stir to combine.
  5. Cover and reduce heat to low; let simmer for 1.5 to 2 hours until beef is tender.
