  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh dill, chopped
  • 1 cup Greek yogurt (or plant-based yogurt for vegan option)
  • 1 clove garlic, minced
  • 1/2 cup cucumber, grated (excess moisture squeezed out)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced cucumber, tomatoes, red onion, and chopped dill.
  2. In a separate bowl, mix Greek yogurt, minced garlic, grated cucumber, lemon juice, olive oil, salt, and pepper until smooth.
