  • 2 tbsp Kosher Salt
  • 1 tbsp Freshly Ground Black Pepper
  • 4 Garlic Cloves, crushed
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Olive Oil
  • 1 cup Red Wine
  • 2 cups Beef Stock

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry; rub with olive oil and season generously with salt and pepper.
  3. Create slits in the roast and insert garlic and rosemary.
  4. Place on a roasting rack in a baking pan. Roast for 30 minutes at 450°F, then reduce to 325°F (163°C) for about another hour until it reaches an internal temperature of 130°F (54°C) for medium-rare.
  5. Remove from the oven and let rest for at least 20 minutes before slicing.
  6. Meanwhile, deglaze the pan with red wine, add beef stock, and simmer until thickened.
