Taco Bell Quesarito Recipe is a quick and easy weeknight meal. It is a combination of the classic Quesarito and Tacos al Carbon.
The crunchy corn tortilla shell is replaced with a crisp flour tortilla shell, providing more flavour to the quesadilla filling.
The chiles are removed because they add a lot of heat to this dish, making it too spicy for most people. This recipe will require about 20 minutes to prepare.
This is an updated version of the Quesarito Recipe posted on Friday, February 6, 2012, after I tried the recipe myself. I have removed all the negative comments from people saying this recipe is a bust and does not work.

How to make Taco Bell Quesarito Recipe
Prepare time: 20 min
Cook: 5 min
Total: 25 min
Served: 4 people
Equipment:
- Skillet
- Griddle
- Long-handled metal spoon
- Nylon brush
- Tortilla warmer
- Nonstick spray
- Cutting board
- Sharp knife
- Cheese grater
- Plastic wrap
- Multiple plates
- Large bowl
- Serving platters
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 1/2 cups water
- 1/4 cup vegetable oil
- 2 1/2 tablespoons cooking oil
- 21.5 ounces of cheese (I used pepper jack cheese) – divided into 3 equal amounts (about 2 cups each)
Cooking Directions:
Step 1: Mix flour and salt in a large bowl, make a well in the centre and pour in water. Add vegetables and cooking oils. Mix by hand until the dough come together and no longer sticks to the side of the bowl.
Step 2: Place the dough ball in a gallon ziplock bag and close the bag, pressing out any air. Refrigerate for at least an hour.
Step 3: Remove the dough from the refrigerator, and knead for about 30 to 45 seconds or until smooth and elastic. (It should feel soft like a ripe banana when you press your finger on the dough)
Step 4: Divide dough into as many pieces as you want to make quesadillas. I used 2 balls of dough each time to make 8 thin quesadillas.
Step 5: Place the dough on a large plate and cover it with plastic wrap. Let the dough sit in a warm area for about 20 minutes or until it is pliable.

Step 6: Heat your skillet. For best results, use a non-stick pan so that you do not have to add oil later for frying. If you use an iron skillet, add a light layer of vegetable oil and heat the pan over medium heat for about 30 seconds to one minute before adding the quesadilla batter.
Step 7: Pour 1/2 cup of batter onto the skillet and cook for about 5 minutes. The batter should be golden brown but not burnt. If it is too dark, you may use less vegetable oil for cooking the next batch of quesadillas.
Step 8: After 5 minutes, flip the quesadilla and cook for another 3 to 4 minutes or until done. Repeat with all the remaining quesadillas.
Step 9: After cooking all the quesadillas, place them on a tortilla warmer while they are still hot. (You may use the top rack of your dishwasher if you do not have a tortilla warmer)
Step 10: Spread 1 to 2 tablespoons of shredded cheese on half of the quesadilla and place another cooked quesadilla on top. Continue with this procedure until you finish with all the shredded cheese.
Step 11: Toast the tortilla in a skillet over medium heat for about 1 minute on each side. Serve immediately.
