Instructions

  1. Start by chopping fresh spinach into roughly bite-sized pieces, then squeeze out any excess water to prevent sogginess.
  2. Heat a tablespoon of oil in a frying pan over medium heat until shimmering and fragrant, then add the minced garlic. Sauté for about 30 seconds until it becomes fragrant and slightly golden.
  3. Add the chopped spinach to the pan and cook briefly for 1-2 minutes until wilted and fragrant, then remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk the beaten egg, then stir in the flour, salt, and pepper until smooth and thickened slightly.
  5. Fold in the cooked spinach mixture and crumbled feta cheese, mixing gently until evenly combined. The batter should be thick but scoopable.
  6. Heat about a quarter-inch of oil in the frying pan over medium heat until hot and shimmering, testing with a small drop of batter—if it sizzles immediately, you're ready.
  7. Scoop heaping tablespoons of batter into the hot oil, gently pressing each fritter down with the back of the spoon to flatten slightly.
  8. Fry the fritters for about 2-3 minutes per side, until they are golden brown and crispy, flipping carefully with a spatula. You should hear a gentle crackling sound as they crisp up.
