- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup salsa
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 onion, diced
- 1 bell pepper, diced
- 1/2 cup cilantro, chopped
- Salt & pepper to taste
- Optional toppings: shredded cheese, sour cream, lime wedges
Instructions
- Place the chicken breasts in the slow cooker.
- Add diced onion, bell pepper, salsa, chicken broth, lime juice, and the spices; season with salt and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
- Remove chicken, shred with two forks directly in the cooker.
- Return shredded chicken to the cooker and stir; let it simmer for 10 minutes to absorb flavors.
- Stir in cilantro, adjust seasoning, and serve with tortillas or rice, topped with optional cheese or sour cream.
