- 1 cup bourbon
- 2 medium onions, chopped

- 2 cups beef broth

- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil (for searing)
Instructions
- Preheat your oven to 300°F (150°C).
- Pat dry the short ribs and season generously with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the short ribs on all sides until browned (about 3-4 minutes per side). Remove them from the pot.
- In the same pot, sauté the onions until translucent (about 5 minutes), then add garlic and cook for another minute.
- Pour in balsamic vinegar and bourbon, scraping up any browned bits from the pot. Stir in beef broth.
- Return the short ribs to the pot along with thyme and bay leaves. Bring to a simmer, cover, and transfer to the oven.
- Braise for 2-3 hours until tender.
