  • 3 lbs beef short ribs
  • 1 cup balsamic vinegar
  • 1 cup bourbon
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil (for searing)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pat dry the short ribs and season generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the short ribs on all sides until browned (about 3-4 minutes per side). Remove them from the pot.
  4. In the same pot, sauté the onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  5. Pour in balsamic vinegar and bourbon, scraping up any browned bits from the pot. Stir in beef broth.
  6. Return the short ribs to the pot along with thyme and bay leaves. Bring to a simmer, cover, and transfer to the oven.
  7. Braise for 2-3 hours until tender.
  8. Let rest for 10 minutes before serving.
