  • 2 slices sourdough bread
  • 4 oz fresh mozzarella cheese, sliced
  • 2 tbsp pesto sauce
  • 1 tbsp unsalted butter
  • 1/2 cup fresh spinach (optional)

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. Spread butter generously on one side of each slice of sourdough bread.
  3. On the unbuttered side of one slice, layer mozzarella cheese and pesto sauce. If using spinach, add it now before topping with the second slice of bread (buttered side out).
  4. Place the sandwich in the heated skillet and grill for 3-4 minutes until golden brown.
  5. Flip the sandwich and grill the other side for an additional 3-4 minutes until crispy and cheese is melted.
  6. Remove from heat, let cool slightly, slice, and serve warm.
