- 2 slices sourdough bread
- 4 oz fresh mozzarella cheese, sliced
- 2 tbsp pesto sauce
- 1 tbsp unsalted butter
- 1/2 cup fresh spinach (optional)
Instructions
- Preheat a nonstick skillet over medium heat.
- Spread butter generously on one side of each slice of sourdough bread.
- On the unbuttered side of one slice, layer mozzarella cheese and pesto sauce. If using spinach, add it now before topping with the second slice of bread (buttered side out).
- Place the sandwich in the heated skillet and grill for 3-4 minutes until golden brown.
