Instructions
- Boil beets and potatoes in salted water until tender (30-40 minutes for beets; 15-20 minutes for potatoes). Cool, then peel and grate.
- Finely chop the pickles and red onion.
- In a large bowl, combine grated beets, carrots, diced potatoes, pickles, onions, and herbs.
- In a separate bowl, whisk together vegetable oil, vinegar, salt, and pepper.
- Pour dressing over the vegetable mixture; toss gently to combine. Chill for at least an hour before serving.
