  • 2 small waxy potatoes, boiled and diced

  • ¼ cup vegetable oil (sunflower or canola)
  • 3 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Boil beets and potatoes in salted water until tender (30-40 minutes for beets; 15-20 minutes for potatoes). Cool, then peel and grate.
  2. Finely chop the pickles and red onion.
  3. In a large bowl, combine grated beets, carrots, diced potatoes, pickles, onions, and herbs.
  4. In a separate bowl, whisk together vegetable oil, vinegar, salt, and pepper.
  5. Pour dressing over the vegetable mixture; toss gently to combine. Chill for at least an hour before serving.
