  • 1 medium head of cabbage, chopped
  • 1 lb ground beef
  • 1 cup uncooked brown rice (or white rice)
  • 28 oz can diced tomatoes (with juice)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping cabbage, onion, bell pepper, and garlic.
  2. Optionally sauté onions and garlic in a skillet until translucent.
  3. Add the chopped cabbage to the crockpot followed by ground beef, sautéed onions if used, bell peppers, rice, canned tomatoes (with juice), broth, oregano, thyme, parsley, salt, and pepper.
  4. Stir everything gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until everything is tender.
  6. Serve warm and enjoy!
