  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper; cook for 6-8 minutes per side until golden brown. Remove from heat and shred.
