  • 2 large eggs

  • 1/4 cup raspberry jam (for filling)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup chocolate chips, melted (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar. In another bowl, beat eggs with melted butter and milk; then combine with dry ingredients.
  3. Fill each cupcake liner two-thirds full with batter.
  4. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool for five minutes before transferring to wire racks.
  5. Once cooled, cut out the center of each cupcake and fill it with raspberry jam.
  6. For frosting, beat softened butter and powdered sugar until fluffy; gradually add melted chocolate chips until smooth. Frost cupcakes.
