  • 1 pound pork tenderloin
  • 1 pound baby potatoes, halved
  • 3 medium carrots, sliced into even pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine olive oil, minced garlic, herbs, salt, and pepper to create the marinade.
  3. Place the pork tenderloin in a resealable bag, pour half of the marinade over it, seal and marinate for at least 30 minutes or overnight in the fridge.
  4. Toss the halved baby potatoes and sliced carrots in the remaining marinade until well coated.
  5. Line a large baking sheet with parchment paper. Arrange the pork in the center and scatter the vegetables around it.
  6. Bake for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C). Rest for 5 minutes before slicing.
