Instructions
- Set the Instant Pot to the sauté function; heat olive oil and sauté the chopped onion until translucent (about 3-4 minutes).
- Add minced garlic and cook for an additional minute until fragrant.
- Season chicken thighs with salt, pepper, oregano, and paprika; add them to the pot and sear on each side for approximately 3-4 minutes.
- Stir in the rinsed rice and pour in the chicken broth carefully.
- Secure the lid on the Instant Pot and cook on high pressure for 10 minutes followed by a natural release for another 10 minutes.
- Fluff the mixture with a fork before serving warm.
