  • 2 cups low-sodium vegetable broth (480ml)
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil (15ml)
  • 3 green onions, chopped

Instructions

  1. Prepare the cucumbers: Slice in half lengthwise, scoop out seeds, and cut into small chunks.
  2. Blend ingredients: In a blender, combine cucumber chunks, miso paste, vegetable broth, grated ginger, sesame oil, and half of the green onions. Blend until smooth.
  3. Adjust seasoning: Taste and adjust seasoning as desired; add more miso or ginger if needed. If too thick, add extra broth.
  4. Chill: Transfer soup to an airtight container and refrigerate for at least one hour.
