- 2 cups low-sodium vegetable broth (480ml)
- 1 tsp fresh ginger, grated
- 1 tbsp sesame oil (15ml)
- 3 green onions, chopped
Instructions
- Prepare the cucumbers: Slice in half lengthwise, scoop out seeds, and cut into small chunks.
- Blend ingredients: In a blender, combine cucumber chunks, miso paste, vegetable broth, grated ginger, sesame oil, and half of the green onions. Blend until smooth.
