  • 2 cups fresh corn kernels (about 3 ears of corn)
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley), for garnish

Instructions

  1. If using fresh corn on the cob, boil water in a pot. Cook the corn for 5-7 minutes until tender. Cool and cut off the kernels.
  2. In a large mixing bowl, combine halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  3. Add the cooled corn kernels and crumbled feta cheese to the bowl.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
  5. Pour the dressing over the salad ingredients and gently toss to combine.
  6. Garnish with fresh herbs before serving. Serve immediately or refrigerate for up to an hour.
