- 2 cups cherry tomatoes, halved

- 1 cup cucumber, diced

Instructions
- If using fresh corn on the cob, boil water in a pot. Cook the corn for 5-7 minutes until tender. Cool and cut off the kernels.
- In a large mixing bowl, combine halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
- Add the cooled corn kernels and crumbled feta cheese to the bowl.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
