  • 4 lbs pork shoulder
  • 2 tbsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 6 cloves garlic, minced
  • 2 large yellow onions, sliced into thick rings
  • 2 medium carrots, chopped
  • 1 handful fresh thyme sprigs
  • 3 tbsp Dijon mustard
  • 1 cup beer or apple cider

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare your roasting pan by lining it with parchment paper or greasing it with oil.
  2. Pat the pork shoulder dry and season generously with salt and pepper. Mix minced garlic with mustard and rub all over the pork.
  3. Place sliced onions and chopped carrots at the bottom of the roasting pan.
  4. Set the seasoned pork on top of the vegetables and tuck fresh thyme around it.
  5. Pour beer or apple cider gently around—not over—the pork.
  6. Cover tightly with aluminum foil and roast for about three hours until the internal temperature reaches at least 190°F (88°C).
  7. Remove foil during the last hour to achieve crispy skin. Rest for at least 20 minutes before slicing.
