  • 1 lb chicken breast, sliced
  • 3 tablespoons tamarind paste
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar (palm or brown)
  • 2 tablespoons soy sauce
  • 2 eggs
  • 1 cup bean sprouts
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Soak rice noodles in hot water for 20-30 minutes until soft but firm; drain well.
  2. In a large skillet or wok over medium-high heat, add oil and sauté sliced chicken until fully cooked; remove and set aside.
  3. In the same skillet, add minced garlic and cook briefly before adding bean sprouts; stir-fry for about 2 minutes.
  4. Add drained rice noodles along with tamarind paste, fish sauce, soy sauce, and sugar; toss until well combined.
  5. Push noodle mixture to one side of the pan; crack eggs into the empty space and scramble until cooked; mix everything together with the cooked chicken.
  6. Serve hot garnished with chopped cilantro and lime wedges.
