- 1/4 cup balsamic vinegar

- 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

Instructions
- Pat dry the beef short ribs and season generously with salt and pepper.
- In a hot skillet, sear each side of the ribs until browned (about 3-4 minutes per side).

- Place seared short ribs on top of the onions.

- Cover and cook on low for 8 hours or high for 4 hours until meat is fork-tender.
- Remove ribs from the slow cooker and mix cornstarch slurry into the juices to thicken before serving.
