- 2 medium beets, wrapped in foil

- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Trim Brussels sprouts and halve them; place on one baking sheet.
- Wash beets, wrap individually in foil, and place on the second baking sheet. Roast both for 25-30 minutes until tender.
- After roasting, let beets cool slightly before peeling and cutting into wedges.
- In a large bowl, combine mixed greens, Brussels sprouts, beet wedges, feta cheese, and toasted pecans.
- Whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl; pour over salad just before serving.
